Description: There is a relatively new and decidedly healthy educational movement emerging across the US. This kind of vertical integration of engaged learning has considerable potential to deepen education and K-12, and simultaneously to address issues of education and health. Here, Duster and Waters evaluate two experiments to integrate food into education: one at the K-12 level, in the public school system in Berkeley CA, and the other at the undergraduate level, at Yale University. Both of these experiments draw on the pedagogically engaging aspects of cultivating, cooking, and eating food.
